There are so many....but here's a sampling of my favorites...
The last enemy that shall be destroyed is death.
~Epitaph on the graves of Lily and James Potter
“If you loved Lily Evans, if you truly loved her, then your way forward is clear.” ~Dumbledore to Severus Snape
“He is his father over again—“
“In looks perhaps, but his deepest nature is much more like his mothers.”
Dumbledore: But this is touching Severus, have you grown to care for the boy, after all?
Severus Snape: For him? Expecto Patronum!
From the tip of his wand burst the silver doe: She landed on the office floor, bounded once across the office, and soared out of the window.
Dumbledore watched her fly away, and as her silvery glow faded he turned back to Snape, and his eyes were full of tears.
“After all this time?”
“Always,” said Snape.
“Look…at…me.” ~Severus Snape
Every second he breathed, the smell of the grass, the cool air on his face, was so precious: To think that people had years and years, time to waste, so much time it dragged, and he was clinging to each second.
“You’ve been so brave.”
He could not speak. His eyes feasted on her, and he thought that he would like to stand and look at her forever, and that would be enough.
“You’ll stay with me?”
“Until the very end,” said James.
…
“Stay close to me,” he said quietly
“That which Voldemort does not value, he takes no trouble to understand. Of house-elves and children's tales, of love, loyalty, and innocence, Voldemort knows and understands nothing. Nothing. That they all have a power beyond his own, a power beyond the reach of any magic, is a truth he has never grasped.” ~Dumbledore
“It is a curious thing, Harry, but perhaps those who are best suited to power are those who have never sought it. Those who, like you, have leadership thrust upon them, and take up the mantle because they must, and find to their own surprise that they wear it well.” ~Dumbledore
“Of course it is happening inside your head, Harry, but why on earth should that mean that it is not real?” ~Dumbledore
"Not my Daughter, you Bitch!" ~Molly Wasley
“I’d want some peace and quiet, if it were me,” she said,
(I love how Luna always seems to know what Harry needs. I love their friendship.)

Oh, I loved this book so much. My 2nd favorite book. HPSS/PS is first.
Severus' love Lily must have been so painful. To watch Harry everyday and to have never gotten the chance to get over here.
I loved Snape's last words. And basically anything Dumblydore has to day. lol.
